Preface to the Second Edition. In the twenty years since the first edition Patisserie was published, there have been great changes in almost every aspect of this art. Such changes are reflected in the book to bring it up to date without deviating too much from its original concept. The greatest change is the introduction of colour photography. Comments received from many teachers overseas as well as in this country have influenced some of the changes made in this new edition.
